SKILLET PIZZA CASSEROLE
Prep time:             15 minutes
Cooking time:      15 minutes
Side Dish:             Tossed Salad
Serves:                   3 - 4
 
Ingredients:
1½ pounds lean ground beef
   2 cups marinara sauce
1½ cups shredded pizza cheese
   1 package refrigerated pizza dough (10-ounce)
   1 tablespoon grated Parmesan Cheese
 
1. Preheat oven to 425º F.  Cook ground beef in a large ovenproof or cast-iron skillet over medium-high heat stirring frequently, until brown and crumbly.  Drain well, return beef to skillet.
 
2. Add marinara sause to beef in skillet, mix well.  Sprinkle mozzarella over top.
 
3. Unroll pizza dough. Spread over top of beef mixture and mozzarella in skillet; trim with scissors to fit dough just inside skillet.  Discard excess dough.
 
4. Sprinkle top of dough with Parmesan Cheese.  Bake casserole in skillet until crust is browned, about 15 minutes.  Remove skillet from oven; let stand for about 5 minutes.  Cut into wedges.
SCALLOPED POTATOES
Prep time - 25 minutes
Cooking time - 60 minutes
Side Dish - Steak
Serves - 4 - 6
 
Ingredients:
6  medium Russet potatoes, peeled
1  teaspoon salt
¼ teaspoon pepper
1  cup whipping cream
1/3 cup butter
½ cup shredded Cheddar Cheese
1  tablespoon snipped fresh parsley, or 1 teaspoon dried parsley
 
1. Preheat oven to 325º F.  Cut the potatoes into julienne strips.  Place in a greased 2-quart casserole dish.
 
2. Sprinkle with salt and pepper.  Cover with lid or foil and bake for 45 minutes or until tender.
 
3. Heat whipping cream and butter in a saucepan until butter melts.  Pour over potatoes.
 
4. Sprinkle with Cheddar cheese.  Bake uncovered for 15 minutes or until lightly browned.  Remove from oven and sprinkle with parsley.  Serve hot.
CAJUN-SPICED PORK
Prep time - 25 minutes
Cooking time - 60 minutes
Side Dish – Wild Rice
Serves - 4
 
Ingredients:
1  teaspoon thyme
2  teaspoons paprika
1  teaspoon dried oregano
1  teaspoon garlic powder
1/4 teaspoon cumin
½ teaspoon nutmeg
½ teaspoon salt
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1  2-pound boneless pork roast or pork tenderloin
1  tablespoon vegetable oil
 
1. Preheat oven to 350º F.  Combine thyme, paprika, oregano, garlic powder, cumin, nutmeg, salt, cayenne and pepper in a small bowl.
 
2. Rub pork roast with vegetable oil.  Rub seasoning mix into roast.
 
3. Place roast in a shallow roasting pan.  Roast to an internal temperature of 155º F on a meat thermometer, about 1 hour, or about 30 minutes per pound.
 
4. Let pork roast stand in pan for 10 minutes before slicing.
SWEDISH MEATBALLS
Prep time - 35 minutes
Cooking time - 35 minutes
Side Dish – Chips
Serves - 6
 
Ingredients:
1  pound Ground Sirloin
½ pound Pork Sausage
¾ cup bread crumbs
2/3 cup milk
1  tablespoon Worcestershire sauce
1  tablespoon parsley flakes
1/8  teaspoon pepper
½ teaspoon salt
1  egg
1  grated onion
1  package brown gravy mix
¼ cup hot water
 
1. Thoroughly mix all ingredients except brown gravy mix and water.
 
2. Form mixture into 1½ inch balls and place in deep skillet over medium-low temperature, turning frequently.
 
3. Prepare brown gravy mix, set aside.
 
4. Brown meatballs over medium heat for about 20 minutes or until cooked through.  Drain drippings.
 
5. Pour brown gravy from step 3 and ¼ cup hot water over cooked meatballs, cover and simmer for about 15 minutes.
 
6. Serve on dollar-sized egg buns.
OVEN RIBS
Prep time - 35 minutes
Cooking time - 35 minutes
Side Dish – Chips
Serves – 4 to 6
 
Ingredients:
1   large oven cooking bag
¼   cup flour
1½   cups BBQ sauce
½   cup chopped onion
½   cup green pepper
3½   pounds pork spare ribs, fat removed
 
1. Preheat oven to 325º F.
 
2. Shake flour in cooking bag and place bag in 13x9x2 baking pan.  Add BBQ sauce, onion, and green pepper to flour in bag, and squeeze bag to blend ingredients.
 
3. Cut ribs in serving size pieces, place in bag, and turn to coat ribs.
 
4. Arrange ribs in even layer, close bag with nylon tie, and place in baking pan
 
5. Cut six half-inch slits in top of bag to vent.
 
6. Bake 1½ hours or until tender.
