Knife Use & Care
Sharpening
Sharp knives are safer than dull ones because dull knives require more pressure for cutting, which can result in slipping. Sharpening knives with a sharpening steel can seem difficult at first, but it’s actually quite easy once you get the hang of it.
  • Hold sharpening steel point down on flat stable surface like table or cutting board
  • Angle the knife blade so that it is approximately 15 degrees from the sharpening steel
  • Pull the knife down & across the sharpening steel in a slight arc, pulling the knife handle toward you. Stroke the entire blade edge from base to tip.
  • Repeat on the other side of the steel.
  • Repeat steps 3 & 4 three to five times, alternating the right & left side of the cutting edge.
 
Knives should be sharpened after every couple uses for maximum performance. 
 
Use a scouring powder to clean & remove metal particles from your sharpening steel.  After cleaning the steel, rinse it with water, dry it thoroughly & store it in a dry place.
 
Cleaning
For best results, hand wash your knives with a soapy cloth & dry immediately. Soaking wood-handled knives in water can remove the natural oils from the handles.  Dishwashing may cause banging against other dishes that can nick the edges.  Additionally, the heat & detergent may have a corrosive effect on the handles.
 
Use a scouring powder to clean & remove metal particles from your sharpening steel. After cleaning the steel, rinse it with water, dry it thoroughly & store it in a dry place.
 
Storing
Sharp knives should never be stored loose in a drawer because contact with hard objects can dull the blade & reaching into a knife drawer can be very dangerous. We recommend storing your knives in a hardwood block for safety & convenience. Many Chicago Cutlery®  sets include a hardwood block for storage. Empty Chicago Cutlery hardwood blocks are also available at many retailers.
 
Knife Safety
  • Keep knives sharp at all times

  • Use knives with a wooden or polyethylene cutting board
  • After handling a knife, lay it down in a cleared area with the blade away from the body & safe distance from the edge of the cutting area

  • Knives should not be used as can openers, screw drivers, or ice picks nor are they intended for prying apart frozen food

La Forme Bakeware
Each piece of La Forme bakeware is designed with the finest materials available to guarantee perfect performance. After extensive product research, Kaiser selected steel as the base material for the entire La Forme Collection. The steel base is coated with one of two nonstick surface systems, depending on the intended use of the piece.
 
In an oven, where the temperature can fluctuate up to 50 degrees in a normal baking cycle, the ideal baking vessel should retain heat well enough to maintain an even temperature. Yet, it should not retain heat so well that a cake, bread or cookie will burn in the time required for complete baking. Kaiser chose heavy-gauge steel as the base material for the La Forme collection, because it conducts heat gently and evenly, and produces the perfect balance necessary for a golden brown crumb or outside of the cake, and a perfectly baked, moist interior. Cakes and breads baked in La Forme cook uniformly, and cookies baked on La Forme cookie sheets brown evenly and maintain their shape.
 
La Forme's heavy-gauge steel eliminates warping in every piece of bakeware. Select La Forme pans are manufactured with the cut- and acid-resistant Magnum coating. This allows baked goods to be cut in the pan.

La Forme Use and Care
All Kaiser Bakeware pans are safe up to 450 degrees F in the oven.
 
For best results, brush a very thin layer of butter or oil on the interior of the pan prior to each use. The butter guarantees perfect release and helps promote a smooth, tightly sealed crust, even browning and good flavor. It isn't necessary to line the pan with expensive parchment paper, or to dust the pan with flour, which can produce an unattractive white crust on cakes and breads.
 
The La Forme pieces coated with the 2-layer Nonstick Surface System are designed to provide perfect release for baked goods that will be removed from the pan. Use of knives or sharp objects should be avoided, as they will damage the surface.
 
However, pieces coated with Magnum are designed to withstand cutting. Any utensils, including sharp knives, can be used in the pan without damaging the surface.
 
Clean La Forme bakeware with hot water, soap and a soft sponge or dishcloth. Avoid using abrasive cleansers. It is neither necessary nor recommended to put La Forme in the dishwasher.
 
Noblesse Bakeware
Each piece of Noblesse bakeware is designed with the finest materials available to guarantee perfect performance. After extensive research, Kaiser selected a steel base coated with two layers of nonstick coating for the Noblesse line. The exterior is painted black to absorb heat, providing even browning and shorter cooking times.
 
In the oven, where the temperature can fluctuate up to 50 degrees in a normal baking cycle, the ideal baking vessel should retain heat well enough to maintain an even temperature. Noblesse Use and Care

Prior to its first use, wash the pan with soap and water. It is recommended that you wash it by hand. It is very easy to clean.
 
Brush a very thin layer of butter on the interior surface of the pan prior to each use. This guarantees a perfect release and promotes even browning, good flavor and a smooth, tightly sealed crust. There is no need to dust the pan with flour, which can create an unattractive white crust on cakes and breads.
 
The pan's heavy-gauge steel and dark color ensure that baked goods brown evenly and generally finish baking in about 10% less time than listed on your recipe.

Apply a thin layer of butter to ExtraordinAire before each use to facilitate the release of baked goods. There is no need to dust the pan with flour. Do not use metal utensils or cut in the pans, as it will damage the nonstick coating.
 
Wash with hot, soapy water and a soft dishcloth. ExtraordinAire is dishwasher-safe. The nonstick coating makes cleanup so easy that hand-washing is recommended. However, do not submerge in water to avoid water being trapped inside the pan's layers.

Table Setting Guide
 
Breakfast/Lunch:
Start with a dinner plate, soup bowl (optional), bread & butter plate (for toast, muffins, etc.), and a cup & saucer for coffee or tea.
 
For flatware, use a 3-piece place setting: dinner fork, dinner knife and teaspoon. The napkin should be placed to the left of the fork.Finish the setting with either a juice or Iced Beverage glass.
 
Dinner or Supper:
The dinnerware placement is similar to what's used for a breakfast/lunch setting. Salad plate can be brought to the table as needed.
 
For flatware, use a 5-piece place setting; salad fork, dinner fork, dinner knife, soupspoon and teaspoon. The napkin should be placed to the left of the forks.The table should be set with both a wine glass and a water or iced beverage glass. The coffee cup & saucer can be brought at the end of the meal if needed.
 
Formal Dinner (including a soup course):
Set the table with a bread & butter plate, a service/base plate and dinner plate. If your pattern doesn't offer a service plate, try getting a bit creative by using a 12" metal tray or glass underliner.
 
For flatware, use dinner fork, salad fork (served after an entree), dinner knife and soup spoon. The butter spreader may be placed on the butter plate. The teaspoon may be placed on the saucer with a coffee cup later. The dessert spoon and dessert fork may be placed above the dinner plate.
 
To add some flair to your table setting, fold your napkins and place them in the center of the dinner plate or in one of the wineglasses.
Add the glasses for red wine, white wine and water, as well as a champagne flute if necessary.
 
Table Setting Tips:
 
  • Keep all tableware approximately one inch from the edge of the table.
  • Place all knives with the cutting edge toward the plate.
  • Arrange all flatware in order of use, working from the outside toward the plate for each course served.
  • If salad is served after entrée, place salad fork next to plate.
  • Glass placement: from right to left, white wine, red wine, and water/iced beverage. Champagne may be placed behind red and white.

Romertopf History 
According to archaeological finds, clay pot cookery can be traced back thousands of years, when food in an earthenware pot was put in the glowing ashes of an open fire. What was important for the taste of the food was not the fire but the pot. The Romans, lovers of good wine and good food, used pots made of a special type of earthenware.
Römertopf was conceived by Bay Keramik in 1966 and was introduced at the Hanover Fair in 1967. And Officially introduced at the Frankfurt Fair and consequent shows around the country in the spring of 1968 with an immediate great success. Reco obtained the exclusive representation from Bay Keramik in August 1974, has represented Römertopf in the United States throughout this period without any interruption, and was consequently granted the exclusive representation of North America, Central and South America.
 
Healthy Cooking 
Everyone knows that a nutritious diet is essential to maintain good health but even the healthiest foods can loose nutritional value when preparation processes allow valuable nutrients to escape. The Romertopf clay pot is an "easy cooking method that seals nutrients in and also down on fats.
